Shin is one of the hardworking parts of the beef carcass, so needs long cooking at a low heat to relax the muscle and melt all the gelatinous bits. It’s well worth the wait, though and will result in a dish that melts in the mouth. 100% Grass Fed sourced locally from Surrey Farms and aged on the bone for 28 days to ensure maximum flavour.

Shin of beef
This cut of beef is difficult to find in supermarkets but it's great for slow cooking. Ben's meat was really tasty with hardly any fat or sinews. Delicious.

Melt in the mouth casserole!
I gave these a dust of flour, a sear, and into the slowcooker with some onions, carrots, and stock for 8hrs. Amazing flavour and just the ticket for late autumn. Definitely going to order again for a beef shin chilli to cook slow in some smoke on the barbeque.
