Locally sourced boneless Saddle of Lamb with a Wild rice, apricot, currents, rosemary and thyme stuffing. Accompanied with a Lamb and Port Gravy.
 
Cooking instructions:
  1. Preheat oven to 180c
  2. Sear of the saddle in a little bit of oil in a medium to high heat pan
  3. Make sure the fat is a nice golden brown 
  4. Transfer to oven 
  5. Roast for 15 minutes
  6. Allow to rest for 5 minute
  7. Whilst resting heat up your gravy in a pan
