Beautiful wild venison from the Southdowns, boned and rolled for easy carving.
- Preheat oven to 180c
- Sear of the haunch in a little bit of oil in a medium to high heat pan
- Make sure you get a even browning over the meat
- Transfer to oven
- Roast for 35-40 minutes
- Allow to rest for 10 minutes
